The small crocus flower, from which the saffron spice derives, is depicted in art from time immemorial; it shows up in Minoan frescoes from the Akrotiri ruins on the island of Santorini, dating from 1600BC. The aromatic component, richly bitter-spicy and subtly leather-smelling, actually comes from the stamen, the delicate red threads in the core of the flower, which are picked by hand. Hence the Santorini fresco is called The Saffron Gatherers.
