Ambergris is what? Whale vomit? Well, sort of. Sperm Whales eat such a large quantity of fish in a day, there's a good bit that won't digest, and it just exits the whale somehow or another - let's not think about this too much - and floats in the ocean, eventually washing up on the shore. Wretchedly awful smelling stuff until it's been bleached and beaten over the years in the ocean and washes ashore and is worth a small fortune. Rare, expensive, it smells a little bit warm and salty.
Now there are synthetic materials they can use, and no whale is ever harmed in obtaining ambergris. They have no idea what they yakked up years ago is being sold for a few thousand. Ambergris adds a depth and interest to a perfume, warming it without weighing it down.
