A very popular note in perfumes, marshmallow is a sugary, sweet, powdery note. Ethyl Maltol is a compound that smells like cotton candy and strawberry jam and an overdose of this was featured in Mugler's Angel, which, in its prime, started the big gourmand trend we have been enjoying for the past 30 years.
